Should cooks and chefs take more responsibility for keeping their knives safely out of sight?

- under lock and key if necessary?

Or perhaps, like me, you already do keep them out of harms way.

We are told not to keep them in drawers, in case the blades get damaged or we get cut, but nowadays more knives are stored in blocks or hung on a wall in the kitchen for easy access. This also provides easy access for opportunists who want knives for other than the intended kitchen use.

Except when in use I keep mine safely out of sight. This is partly because I don't like anyone else using my knives, and partly for safety, and seems common sense to me.
By opportunists I mean outsiders - eg burglars, intruders, unwanted, uninvited, or even some trades people, - people other than trusted family and friends.

I agree with you....I keep mine put up in a sort of 'tool box' where I keep all of my personal knives etc.,....my reasoning, mostly is so others won't use my things or steal them! I have no problems with letting someone use a knife or a peeler or what have you as long as they ask first! This is not always how people work though, is it?! I also am very clumsy...lol...nothing worse than dropping a knife and it sticks in your toe...lol....so I only keep out what I am using. I also don't like the idea of just anyone having access to my tools and knives.....what if one of the dishwashers had a bad day and felt the urge to take it out on a crappy busperson....
My restaraunt has an 'open' kitchen....anyone could walk by and pick up a knife left out on the counter....We are all generally responsible with our equipment and unless we are using it, its very rare to actually find anything of that nature left out for anyone to use or walk off with....thankfully! I find that servers (where I work) are the worst for leaving a knife laying after they have cut lemons or whatever....it does suck! It just seems to go in one ear and out the other...lol....
but I do understand what you mean...and I do agree!
